Laura’s Corn Muffins

 

  • ¼ Cup Shortening, Melted
  • 1 Cup Corn Meal
  • 1 Cup Flour
  • ½ Cup Sugar
  • 4 tsp. Baking Powder
  • ½ tsp. Salt
  • 1¼ Cup Milk
  • 1 Egg, Beaten


 

Heat oven to 400°F. Prepare muffin tins with paper cups, or by greasing each of 12 cups. Combine dry ingredient. Add melted shortening, milk and eggs; mix just until blended. Pour into prepared muffin tins. Bake 15 to 20 minutes until golden, and toothpick or knife inserted in center comes out clean.
